Just one more day of potential vacation. It's been nice not having to deal with work things for the past two weeks, but alas, tomorrow morning everyone will be back at work. Later today I'll knock back the kitchen again and do a quick clean of everything downstairs. Rob's coming out this week on business up in Vancouver, so we expect to see him Friday evening. Matt will finally be coming over sometime this weekend as well -- I need to finalize a meal plan there. I'm thinking of doing Stuffed Shells, Rosemary Focaccia, and some broccoli or something in that vein. Not sure what to do for dessert though.
My goals for the week include hanging the pictures finally in the living room and elsewhere. I also desperately need to snag a cd binder and organize the pile of cds and inserts on my desk.
Meals today will be Minestrone soup for lunch for me, grilled ham and swiss sandwich for Richard. For dinner I'll try that Honey Dijon chicken recipe I got out of Cooking Light (an Uncle Ben's ad really). That will use up a bunch of veggies leftover from the New Year's festivities and clear out some space in the fridge. Tonight I'll pick through the navy beans and soak those for Beanpot beans tomorrow. Cornbread and apple pan dowdy will complete the menu there.
