Well, I got a late start today, but got the beans in the oven at 2pm. They should be ready by 8pm, which is not hideous. An hour into their cooking and I can already smell them -- yummy! The Uncle Ben's chicken recipe last night was a bomb, but I salvaged it by mixing up the sauce beforehand and smelling and tasting and discarding before it ruined the rest of the dish. Ended up improvising a sauce with the grainy dijon, honey, orange juice, hot sauce and seasoned salt. Not terrible.
Minestrone did not get made yesterday, but it's still on the agenda for possibly tomorrow. Tonight I need to finish bills and get them out first thing in the morning. Tomorrow will be more cleaning and laundry, then I'll get down to a final grocery list for the Matt meal this weekend.
